Annual Arroyo Vista Holiday Buffet Set for Dec 17-21

In what has become a campus holiday tradition, the annual Arroyo Vista Holiday Buffet will be held at the Alumni and Visitors Center for five days beginning on Monday, Dec. 17.

“The buffet is a great opportunity for people to get together for a great meal and to sample some of the remarkable creations of our staff,” said Robin Hungerford, general manager of Conferencing, Events and Catering Services. “There will be some familiar favorites as well as some great new offerings for 2012.”

The buffet features appetizers, soups and salads, accompaniments including roasted garlic mashed potatoes, and an ample dessert station featuring assorted pies, cookies, truffles, cupcakes and a salted carmel bread pudding. Entrees include prime rib eye with horseradish cream, roasted chicken breast stuffed with feta cheese, sundried tomatoes, basil and zucchini, sole stuffed with broiled broccoli rabe and cous cous, and Portobello mushroom ravioli in a scallion beurre blanc sauce.
