RIVERSIDE, Calif. — With the assistance of members of UC Riverside’s Dining Services and several campus staff, faculty and administrators, Chancellor Kim A. Wilcox fulfilled his “Promise for Education” Friday by hosting a free pancake breakfast for students, staff and faculty at the Upper HUB Plaza.

Wilcox promised to host the meal if he raised $10,000 for scholarships in the recent “Promise for Education” campaign.

Prior to the event, the chancellor completed a necessary online food safety course with a perfect score, then donned a chef’s coat, hat and Dining Services badge that read “Kim Wilcox, Chancellor.”

The team cooked more than 1,800 pancakes and distributed an estimated 900 meals that included sausage and orange juice during the breakfast.
