Dining Services is sponsoring delicious ways to eat green Oct. 19-23

UCR’s Dining Services is offering many yummy opportunities to eat green the week of Oct. 19-23 in preparation for the national Food Day push “Toward a Greener Diet” on Oct. 24.

Food Day is an annual event — a day to resolve to make changes in our own diets and to take action to solve food-related problems in our communities at the local, state, and national level, a top priority of the University of California Global Food Initiative.

Dining Services invites everyone to take the UC Eats Real — Food Day Pledge. Help Food Day reach 10 million new people with the message of real food. In the meantime, bon appetite

Monday, Oct. 19:

  • Residence halls are serving grass-fed burgers instead of traditional grain-fed burgers.
  • Produce-cooking demonstration from 5 to 8 p.m. at the Demonstration Kitchen for 30 participants, offered by the Student Recreation Center

Tuesday, Oct. 20:

  • “Seeds of Change” specialty entrées—healthy, sustainable, socially responsible and delicious!— offered during lunch and dinner at UCR residential restaurants, featuring two Dining Services principles: “Think Produce First” and “Choose Healthier Oils.”
  • Noon Bell Tower: Culinary Chameleon’s locally sourced, “Think Produce First” tacos and a Moo Moo Ice Cream Truck creation made with our own UCR Citrus.
  • Dining Services restaurants present a culinary demonstration on the HUB Upper Mall from 11:30 a.m. to 1 p.m., featuring flavorful “Seeds of Change” menu items. Provide feedback on your favorite “Think Produce First” and “Reduce Sugary Beverages” items; they may show up on your local retail menu!

Wednesday, Oct. 21:

  • Sample many of the healthy snacks in our vending machines and learn about our “Well Within Reach” Healthy Vending Program from 11 a.m. to 1 p.m. at the Bell Tower, presented by First Class Vending.
  • Salad bars at the Lothian and A-I Residential Restaurants feature locally sourced produce, including some from our own UCR R’Garden.
  • Find out about the UCR Food Pantry at 4 p.m. in HUB 269 at 4 p.m., sponsored by The Well.

Thursday, Oct. 22:

  • Improve your health and lower your carbon footprint by eating delicious hand-formed beef (60%) and mushroom (40%) burgers at the Lothian and A-I Residential Restaurants during lunch and dinner.
  • Join UCR Dining Services Executive Chef, Burke Reeves at the Market at Glen Mor for a cooking demonstration on “What to do With My UCR Farmshare Produce,” at 12:15 p.m. and again at 5:15 p.m.
  • -Relax and enjoy R’Garden Movie Night featuring “Symphony of Soil” from 5 to 6 p.m. at the R’Garden.

Friday, Oct. 23

  • Help us reverse the national obesity and diabetes epidemic by reducing consumption of sugary beverages. Join us for the Spa Water Challenge at A-I and Lothian Residential Restaurants, featuring student-submitted recipes. Our residential students will be submitting recipes throughout the week and the top three at each facility will be featured for lunch and dinner on Friday. Drink up … it’s good for you!
